The Chateau’s private dining rooms are the stage for an exquisite pairing of fine wines and the seasonal cuisine of Haut-Bailly’s Chef. Set in the dining room of the Chateau, the Chef ’s menu is designed around seasonal products, unveiled at the table. This experience includes a winery visit, an aperitif with Champagne, a four-course menu paired with 3 wines from the estate.

A unique moment to share in total intimacy in the Château’s dining room, accompanied by an exclusive programme to discover the vineyards. This self-paced experience includes a tour of the estate, a tasting session, a four-course menu paired with 3 wines from the estate.

The Chef cuisine, Maxime Pommier

The chef creates his recipes in the same way that a cellar master makes his wines: by selecting the best ingredients, using art and know-how, with humility and the desire to achieve the utmost precision.

Born in La Rochelle, Maxime Pommier began his career on the shores of the Atlantic Ocean, where he learned to cook seafood. Fascinated by Haute Gastronomy, he went back to school and continued his apprenticeship at the Hôtel de Paris in Monaco, before working his way up the ladder at renowned Michelin-starred restaurants: the Burgundy in Paris and Garopapilles in Bordeaux.
Maxime joins Haut-Bailly in September 2021. His cuisine is based on local and seasonal produce, and is both classic and innovative, reflecting the spirit of the estate. The combinations he creates and the pairings he puts forward provide an enhanced dimension to the wines of Haut-Bailly.
